Easy Aviyal.. Palakkadan style.. The most important thing is we need vegetables of all colours...which makes aviyal delicious,healthy and beautiful. Ingredients : 1.Vegetables -1cup,cut to slices like in picture ( Include-cucumber,carrot,drumstick,pumpkin) 2.Grated coconut-half cup 3.Turmeric powder-1tsp 4.Green chilly-4 5.cumin seeds-2tsp 6.Curry leaves 7.Coconut oil-1 teaspoons 8.Salt 9.Curd-half cup Method: 1.Cook the vegetables with salt as required. 2.Crush the grated coconut with ingredients 3,4,5.(just crush,don't grind to paste) 4.When the vegetables are cooked add curd and the crushed coconut mixture.stir well and leave it for a minute. 5.Switch off the stove and add the curry leaves and coconut oil(coconut oil is must),stir well and serve hot with rice.
